I looove Kimchi! I know that it’s love it or hate it kinda thing just like cilantro!
But for Kimchi lovers, this dish is pretty bomb. It super quick and simple to make, perfect for a weekday dinner.

Soba Noodles

Cook soba noodles according to the package instructions, once cooked place in a bowl and set aside.

Soup

While noodles are cooking, in a pot add together all soup ingredients, mix and bring to a boil. Then lower to a simmer and add in sliced shiitake mushrooms and bok choy.

Assembling the Bowl

Once vegetables are cooked (around 2 minutes), turn stove off and set aside. In a serving bowl, place cooked soba noodles, cooked vegetables, all of the garnishes and then lastly pour in the soup. Mix everything together so the flavors combine and enjoy!
