This Mexican Bowl is definitely one of my go tos on busy days! I always usually have some refried beans, pico de gallo and cream cheese in my fridge so making this bowl is always such a breeze!

In this recipe, you will need 3 of my other recipes to make it. The Pico de Gallo, the No Oil Refried Beans and lastly the Vegan Cream Cheese. Once you’ve made these 3, you can easily make this bowl anytime! Although if want, you can also opt to buy these items ready made in your grocery store and it’ll still be awesome!

Making the Sauce

To the vegan cream cheese add in 1 tbsp of water and mix well. Then add more water if a runnier consistency is desired.

In a serving bowl, place greens as a base and and add all the other ingredients on top!
