Baked Oatmeal on a cozy day...

A classic that can be created into so many different ways!


Serves : 1

 

Ingredients

  • 1/2 a ripe spotty banana

  • 1/2 cup rolled oats

  • 1 tbsp sunflower seeds or any seeds you prefer

  • 1/4 cup frozen blueberries

  • 1/4 tsp cinnamon powder

  • 1/2 cup almond milk

  • 1/2 tsp vanilla extract

  • 1 tbsp maple syrup (optional)


Directions

  1. Preheat oven to 180C

  2. In a bowl, mash half of a ripe spotty banana

  3. Then to that add in all the other ingredients and mix together until the mashed banana and everything else is evenly incorporated

  4. Transfer to a ramekin and bake for 30 minutes


There you have it! A really simple yet delicious warm gooey bowl of baked oats. With this recipe you can change up the flavor by substituting the blueberries with other kinds of berries, mangoes, apples, cherries and many more!

To elevate the dish, add on a scoop of delicious ice-cream/nicecream :)


I noted the maple syrup to be optional because I prefer drizzle it on top after the dish is baked. Plus the ripe mashed banana adds a nice touch of sweetness into the dish!
